Homemade Blackberry Syrup

My hubby is a huge fan of blackberry syrup for his pancakes, but we haven’t been able to find it in the stores recently. So, what’s a girl to do? Make some here at home! It’s a bit more tart than what he used to get, but it’s quite tasty! And a very quick and easy project for a summer evening. You can use fresh or frozen blackberries, so it’s a year-round luxury, but I do find the organic ones are much tastier than regular, so splurge for a few extra dollars, if you can.

I based my blackberry syrup recipe on this one on the internet: The Daring Gourmet’s Homemade Blackberry Syrup. The only change I made was to lessen the amount of sugar, as we tend to like our syrups a bit less sugary.

Enjoy this with pancakes, or as a topping for ice cream. You can’t go wrong either way!
