These cookies are perfect summertime treats. No need to turn on the oven, because they bake in a waffle iron and they’re light as air! You can change up the flavor (I tend to go traditional anise in the wintertime; vanilla or almond in the summer.) And you can turn them into ice cream sandwiches (just sandwich some softened ice cream between two pizzelles, freeze for a few minutes, and then, mangia! Yum!). You can even roll them while they’re still soft, hot off the iron, and turn them into cones! Maybe even dip the edges into a little melted dark chocolate and finely-chopped nuts! Or you can eat them ‘as is’ for a light and sweet snack! So many variations – the options are endless!
