Christmas Pizzelles

Today was pizzelle day. Every Christmas, I make these pizzelles. Usually I make one batch with the traditional anise flavoring, and a second batch with vanilla alone, so the anise-loathing friends will be able to enjoy. I’m that kind of nice friend. 😉

Sprinkled liberally with powdered sugar, they can be messy, especially if you’re wearing dark colors while munching! But don’t let that stop you! They really are some of the best cookies around. Light, a bit sweet, and with a bit of crunch to them, they make a great addition to your holiday buffet table.

When you take them off the pizzelle iron, you can even shape them into waffle cones! Just think! The perfect Christmas cookie becomes a year-round staple!
