Ah, red velvet cakes and cupcakes. Usually made for special occasions, I remember as a child a cousin who requested a red velvet cake for their birthday cake every year. Very unheard of in an Italian household where the ruling birthday cakes were sponge cakes layered with buttercream, surrounded by nuts or colored sprinkles.
But until recently, I’d not experienced red velvet deliciousness in cookie form. But, joy of joys! I found a recipe for this one, and then added the dipped dark chocolate to the backside of the cookie, because, as we all know, chocolate makes everything better.
