The Joy of Smashed Potatoes!

This photo may look like a bit of a mess, but truthfully, smashed potatoes are all about the taste, my friends! Start off by boiling some small red potatoes in a large pot of salted water, about 20 minutes, until fork-tender. Then drain, and place the potatoes on a baking sheet, and with the back of a large spoon, smash each of those potatoes. In a separate bowl, mix olive oil with Italian seasonings (onion powder, garlic powder, basil, parsley, oregano, salt, pepper), the liberally brush those smashed potatoes with the olive oil/herb mixture. Place in a 425 degree oven for about 30 minutes. If they’re not getting brown/crunchy enough for your liking, switch to the broiler for five minutes.

These go great with pork roast, or in our case last night, barbecued burgers. Eat and enjoy!
