I’m not a big casserole girl. Yes, we ate a lot of baked macaroni back when I was growing up, but casseroles, like the tuna casserole variety? Not so much.
But chicken pot pies? Now that’s a whole ‘nother thing! The only thing it shares with the casserole is the type of vessel it’s baked in! Here, in my favorite red casserole bowls, and beneath that toasted puff pastry, there’s chicken. And potatoes, onions, carrots, celery. And peas. Don’t forget the peas. All mixed in with a light cream and chicken stock sauce. And baked ’til the puff pastry is toasty brown and beautiful.
I made three this time around. And gave two away to two beautiful and dear friends. Because chicken pot pie is truly a comfort food, and sharing comfort is something we all could use a bit more of right now.
