It’s raining and dreary outside, and I’m not really feeling the baking vibe today. But I didn’t want the day to be a total washout, so I opted to make this week’s batch of peanut butter. I use unsalted peanuts and nothing else. The peanuts get dumped into my trusty Vitamix, I pulse slowly to start, then increasing speed and power as I go, and within a few minutes, I’ve got fresh peanut butter with no added sugar or other ingredients. I leave a little bit of texture in the peanut butter, but you can continue to blend for a creamier and smoother peanut butter if that’s your preference. The important thing is to go slow – thankfully, the Vitamix has a shutoff feature that will not allow the motor to overheat. But still, a little patience goes a long way with this. And if you’re a peanut butter fan, it’s really head and shoulders above the store bought item. And you can make it fresh on a regular basis. Store in a canning jar for easy storage and no waste packaging. Definitely an easy-peasy project! Enjoy!
