There are simply times I crave a good roast veggie side dish, and often during BBQ season, we tend to forget that we can create delicious roast veggies on the grill (in a grill pan), over a campout’s open flame (in a few layers of aluminum foil), or in a roasting pan in the oven.
My favorite combo is potatoes, sweet onions, red and green peppers, tossed with olive oil, fresh italian seasonings, salt and pepper. Easy as pie, and absolutely delicious!
