Celebrate Lemons for the 1st Day of Spring!

Spring is here, at least on the east coast, where I’ve spent most of the last 6 months. This past week, we saw rain, snow, sleet, high winds, and even a fair amount of sunshine. Typical for the crazy month of March. But today, despite some grey in the skies, we are able (and certainly ready!) to welcome Spring!

My parents are big fans of lemon flavor, so I decided to try a new (to me) recipe from Practically Homemade, for their Easy Lemon Pound Bundt Cake. There are some boxed products here, which is usually not my go-to, but since I’m still working without a lot of my products here in NY, it seemed to be the way to go today.

I had everything in my mom’s cupboard, including the bundt pan, so it was a quick and easy dessert option.

I admit I used the delicious glaze (Lemon paste, confectioner’s sugar, and water) from the Nielsen-Massey website, and found a new lemon pound cake recipe to try next time around!

The house smells of lemons, and that seems to be just right, serving as a perfect welcome mat to Spring!
