I am definitely not a fussy eater, but I’ve got a thing about chicken salad that sneaks in grapes and/or cranberries. It’s a texture thing for me – I just don’t like squishy fruits in my chicken salad. So, today’s chicken salad includes shredded roast chicken breasts, mixed with toasted walnuts, chopped celery, and chopped red onion. Enough to add flavor and crunch, and altogether mixed with a bit of mayo to hold it all together. Just a little salt and pepper to add a bit more flavor. Andthe final result: Absolute yumminess on a warm croissant!
