Granola is one of my favorite crunchy snacks. I love adding it to yogurt or ice cream, or just munching it for a mid-afternoon snack. Making your own at home is really simple – and you can even make some to give to friends!

My recipe includes some honey, brown sugar, coconut oil and vanilla & almond extracts to give it a delicious taste. Combining oats, slivered almonds and shredded or flaked unsweetened coconut are a tasty combination. Today I used shredded coconut, but usually I add Bob’s Red Mill Flaked Coconut, and it’s a bit more substantial. Either way, this is quite yummy!
They say that Seattleites are tree-huggers and granola-crunchers. I guess I am just that! LOL
